Grant's Spaghetti Dinner for Raj
"We have no written recipe for this, but this is what we do when Raj calls from the winery and says he's on his way!" - Judy

1. Put a couple Tbsp. olive oil in skillet and slowly cook 2-4 chopped garlic cloves.
2. Add 1/2 of a small block of firm tofu that has been mashed or ground up - about 4 oz. We grind it up in food processor.
3. Cook together so tofu absorbs oil.
4. Add 1/4 cup EACH fresh parsley, chives and oregano, and 2 Tbsp. fresh basil (all growing out back) and cook together.
5. Grant then adds 1 bottle of the best vodka cream sauce he can get from Italy. His current brand is Delallo.
6. He then fills sauce jar about halfway with good red wine, puts the lid on, shakes jar, pours wine into sauce, stirs and simmers a while.
7. We then put sauce on the spaghetti we have boiled and drained, put salad and bread on the table, and Raj and Grant finish the bottle of red wine - and maybe another one! Mangiamo!
