Savory Tarts with Tomato and Mozzarella Filling

Savory Tart
2 cups flour
1/4 tsp salt
1/4 pound cold butter
1 egg yolk
2 tbsp ice water

1. Mix, put in pie plate, etc. Bake at 425 for 15 minutes

Filling
1 1/2 cups seeded, peeled, chopped tomatoes
1 tbsp olive oil
2 anchovies
1 clove garlic, minced
1/2 tsp dried basil
freshly ground pepper
¼ cup grated mozzarella cheese
6 black olives, pitted and halved
2 tbsp grated parmesan

1. Cook tomatoes in oil until they are soft and the liquid has evaporated
2. Mash anchovies with garlic and add to tomatoes
3. Add basil and pepper to taste
4. Mix with mozzarella and pour into fully baked tart shells. Top each with black olive and parmesan.
5. Bake 5 minutes at 450 until bubbly.
