Mom’s potato salad

5 pounds red potatoes peeled and diced
4 boiled eggs
4 stalks celery, chopped
1 green bell pepper, chopped
1 16oz. jar sweet pickle relish
1 tablespoon yellow mustard
1 Cup mayonnaise
1 onion, chopped
1 teaspoon white sugar
Salt & pepper to taste

1. Boil potatoes until tender but firm (about 15 minutes). Drain and transfer to a large bowl.
2. Boil eggs, peel and chop.
3. Mix all ingredients, cover and chill for several hours.

Potato salad is a very good thing, especially with red potatoes.
