Fruit Galette

Refrigerated pie-dough
6+ Cups fruit
¼ Cup Sugar
2 tablespoons apricot preserves (or your favorite flavor of preserves)
1 tablespoon sugar

1. preheat oven to 450 degrees
2. line a baking sheet with parchment paper, place pie dough on top. Combine fruit and ¼ Cup of sugar and arrange in the center of the dough, leaving a 3 inch border. Fold edges of the dough toward the center, pressing gently to seal. Brush half of the melted preserve over the fruit mixture and edges of the dough. Sprinkle 1 tablespoon of sugar on the dough.
3. Bake at 425 degrees for 10 minutes. Reduce oven temperature to 350 degrees and bake an additional 20 minutes, or until lightly browned.

These are so easy to make, and come out beautifully! It's fun to experiment with fruits, or color coordinate for the season (green apples and raspberries for Christmas). You can also use the above recipe for a savory galette! Enjoy!
