Charleston Coconut Pie
“This is a great and really easy coconut custard pie recipe from my Aunt Dot.” - Naomi

4 eggs beaten
1/2 cup self rising flour
1 1/3 cup sugar
1/2 stick butter or margerine --melted
2 cups milk
1 teaspoon vanilla
1 8-ounce can flake coconut

Preheat oven to 350

Beat all ingredients together & pour into a greased 10 inch pie plate

Bake 45 min. Though the filling seems unsettled do not cook pie any longer

Refrigerate it & it will settle without spoiling it's creamy consistency

If you don't have self rising flour (like me) make your own - it works. A substitute for self rising flour (from the internet) use One cup all purpose flour plus 1 1/2 teaspoon baking powder plus 1/2 teaspoon salt.
