Christmas Breakfast

“Christmas has always consisted of waking up early (later as we have all gotten older) opening presents with one of us playing Santa, eating leftover cookies from the party the night before, and the scrambled eggs with cheese and bacon for breakfast! Admittedly, I am a horrible scrambled egg maker, and dad is the only person who can make these to perfection!” - Meg

Like most Roundy recipes, ingredients above are to taste. Scramble and eat! These eggs got even better when Barb would bring sourdough bread home from SF when we were in college.

My best story about this breakfast is that we have been eating the same thing for years! But, when we ask dad for the regular Christmas breakfast, he never remembers that this is what he makes each year. Obviously, we can’t live without it, and perhaps he just wants to rest and play with his gifts.
